Chicken Enchiladas
Chicken Enchiladas is an moderately easy dinner. Made with 1 can chopped green chiles, 1 medium onion, chopped, 2 tbsp. margarine, 1 boiled and boned chicken (reserve 1 c. broth) and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine the chiles, onion and margarine.
Cook together until onion is clear; set aside.
Mix broth, soup and onion-chiles mixture.
Add chicken; blend well.
Warm tortillas.
Put 1/4 cup chicken mixture on center of tortilla.
Sprinkle cheese and roll. Place, seam side down, in baking dish.
Continue for 6 to 8 minutes.
Pour remaining sauce over enchiladas and spread. Sprinkle remaining cheese over top; bake at 350Β° until hot and bubbly.
