Christmas Cake And Icing is an easy dinner. Made with 1 box fudge cake mix and 1/2 c. coconut, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix as directed on cake mix box, but add the coconut to the mixture.
Bake in two 9-inch cake pans.
When done, cool on cake rack.
When completely cooled, cut the cakes so you will have 4 layers instead of 2 layers.
Put icing on top of each layer but not on sides.
Sprinkle the top with more coconut.
