Enchiladas
Enchiladas is an moderately easy dinner. Made with 1 lb. ground beef, 2 medium onions, chopped, 1 pkg. corn tortillas, 1 can pitted black olives, chopped and 1 lb. grated cheese (monterey jack, monterey jack with peppers, cheddar or a combination), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cook beef with onions.
Prepare tortilla and assemble one at a time.
Fry tortilla in hot oil for a few seconds on each side. Dip into 1 can of heated enchilada sauce and remove immediately. Place on a plate and put olives, cheese and meat mixture on tortilla.
Roll up and place seam side down in a 13 x 9 x 2-inch baking dish.
When all enchiladas are in baking dish, cover with remaining sauce.
Sprinkle top with grated cheese, olives and raw chopped onions.
Bake at 350Β° until bubbly.
