Enchiladas
Enchiladas is an moderately easy dinner. Made with 1 lb. ground beef, 1 (16 oz.) can tomatoes, 1 (6 oz.) can tomato paste, 1/2 c. water and 1/2 c. chopped onion, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Brown meat; drain.
Add tomatoes, paste, water, onion and seasonings.
Simmer 10 minutes.
Fry tortillas in hot oil until softened; drain.
Place rounded tablespoonful of meat sauce and cheese on each tortilla.
Roll up tightly.
Place seam side down in an 11 3/4 x 7 1/2-inch baking dish.
Top with remaining sauce and cheese.
Cover with aluminum foil and bake at 375Β° for 25 minutes.
Makes 6 to 8 servings.
