Freezer Coleslaw
Freezer Coleslaw is an moderately easy dinner. Made with 1 medium head cabbage, shredded (about 10 c.), 1 carrot, shredded, 1 green pepper, chopped, 1 tsp. salt and 1 c. vinegar, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

In a large bowl, combine vegetables with salt.
Let stand 1 hour.
Place remaining ingredients in a saucepan.
Bring to a boil and boil 1 minute.
Drain vegetables and add to vinegar mixture; stir gently.
Ladle into plastic freezer containers and freeze.
When ready to use, defrost and serve chilled.
Makes about 1 1/2 to 2 quarts.
