Great Grandma Harris' Potato Rolls
Great Grandma Harris' Potato Rolls is an moderately easy dinner. Made with 1 c. mashed potatoes, 2 c. scalded, cooled milk, 1/2 c. sugar, 1/2 c. lard or margarine and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Dissolve yeast in 1/2 cup warm water.
Mix potatoes, milk, sugar, margarine, salt and beaten eggs in a mixer and combine well.
Add yeast mixture and again mix well.
Add flour, cup by cup, until the dough is soft, but not too sticky.
Set aside in a greased bowl, in a warm place to rise for 1 to 1 1/2 hours.
Punch down when doubled.
Let rise again for about 45 minutes, until doubled.
