Jelly Muffins
Jelly Muffins is an moderately easy dinner. Made with 1/3 c. shortening, 1 3/4 c. enriched flour, 2 1/2 tsp. baking powder, 1 egg and 2 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Sift flour, baking powder, sugar and salt into a large bowl. Put shortening skillet and melt.
Cool slightly. Beat egg smooth; add milk, then add cooled shortening. Pour mixture into flour mixture.
Stir only until dry ingredients are moistened.
Muffin tins with paper liners.
Fill half with batter, teaspoon of jelly, finish covering with batter.
Bake for 25 minutes at 400Β°.
