Lemon Ice Cream Dessert
A tart, lighter frozen dessert made with skim milk, lemon juice, lemon rind and a sugar substitute. Bright, citrusy and refreshingly cold.

Melt margarine in pan.
Blend in flour and salt.
Add half of the skim milk, stirring steadily, to the boiling point.
Mix in sugar, then cook on low heat for 5 to 10 minutes.
Remove from heat and stir in remaining milk.
