Mexican Chicken
Mexican Chicken is an moderately easy dinner. Made with chicken, 1 small onion, diced, 1 can ro-tel, 1 can cream of chicken soup and 1 can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Boil the chicken. Cool and strip the meat off the chicken bones.
Put tortilla chips on bottom of baking dish and place a layer of meat over the tortilla chips.
Mix together the onion, Ro-Tel, soups and chicken broth.
Pour a layer of mixture over the chicken, then a layer of cheese.
Repeat; layer of chips, chicken, broth mixture and cheese. Bake at 350Β° for 25 to 30 minutes.
