Noodle Kugel
Noodle Kugel is an moderately easy dinner. Made with 2 eggs or equivalent amount egg substitute, 8 oz. wide noodles, cooked according to pkg. directions, 1/2 c. skim milk, 1/2 c. golden raisins, plumped and 1/2 c. cottage cheese (small curd, low sodium and low-fat), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat eggs; add all other ingredients to noodles and put in greased 8 x 8-inch baking dish or pan.
Bake at 325Β° for 1 hour. If not serving immediately, turn temperature down to warm and cover with aluminum foil.
Serves 12.
This makes a good accompaniment to roasted meats or to a brunch buffet.
