Quesadillas
Quesadillas is an moderately easy dinner. Made with 1 chopped celery stick, 1 green pepper, cut into large pieces, 1 chopped onion, 2 peeled and chopped tomatoes and 1/4 c. tomato sauce, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Place first 6 ingredients in large saucepan with enough water just to cover.
Bring to boil, then lower heat.
Continue cooking until water is reduced.
Remove chicken and shred.
Arrange flour tortillas on a large tray.
Top each tortilla with chicken, Cheddar cheese and cream cheese.
Top with another flour tortilla. Press gently together.
Bake at 325Β° until cheese melts.
Do not overbake or they will become hard.
Cut each tortilla into 4 equal pieces.
Top with salsa and serve.
