Made with 1 1/2 c. cubed tomatoes, 1/4 c. sliced scallion (white part only), 1/4 c. freshly squeezed lime juice, 1/4 c. freshly chopped fine cilantro and 2 tsp. minced jalapeño pepper (1 large), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine all ingredients in a small serving bowl and set aside for the flavors to meld, about 3 hours or overnight is best. Keeps about 1 week. Good on almost everything.
