Salsa Chicken
Salsa Chicken is an moderately easy dinner. Made with 1 tbsp. oil, 1 lb. chicken breasts, 1 onion, chopped, 1 green pepper, chopped and 10 oz. pkg. frozen sweet corn, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cube chicken breasts.
Saute the onion, green pepper and chicken in the oil.
Cook until chicken is cooked.
Add corn, chicken broth and salsa.
Bring to a boil.
Add the Minute rice. Stir; cover and remove from heat.
Let stand 5 minutes.
Fluff up, then sprinkle on the cheese.
Cover for 2 more minutes until the cheese melts.
Serves 4.
