Zucchini Pilaf
Zucchini Pilaf is an moderately easy dinner. Made with 2 zucchini, cut up, 2 garlic cloves, chopped fine, 2 tbsp. butter, 1/2 c. dry white wine and fresh grated parmesan cheese, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Saute zucchini in oil and garlic.
Remove from pan.
Add rice and brown in butter.
Place rice in a saucepan; add soup stock and white wine.
Bring to boil without lid.
Add salt.
Place zucchini on top of rice.
Do not stir.
Cover and simmer.
Add cheese when serving.
