Baked Cheesecake
Baked Cheesecake is an moderately easy dinner. Made with 2 c. graham crackers, 1/2 c. sugar, 1 1/2 tsp. cinnamon, 1/2 c. melted butter and 4 eggs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Heat oven to 350°.
Combine crumb with next 3 ingredients. Reserve 3/4 cup with spoon.
Press the rest to bottom and sides of 9-inch spring-form.
Beat eggs light, slowly beat in 1 cup sugar. Add next 5 ingredients and beat with hand or beater until blended.
Sieve.
Stir in lemon rind.
Pour into pan.
Sprinkle with reserved crumbs.
Bake at 350° for 1 hour.
Turn off heat, open oven door.
Cool cake in oven for 1 hour.
Don't fret, it will settle.
Chill.
Remove pan sides.
Makes 10 to 12 servings.
