Baked Potato Salad
Baked Potato Salad is an moderately easy dinner. Made with 8 diced boiled potatoes, 1 c. mayonnaise, 1 lb. velveeta cheese, diced, 1/2 c. chopped onion and 6 slices raw bacon, diced, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Mix together potatoes, mayonnaise, cheese and onion.
Season with salt and pepper to taste.
Put into a buttered baking dish or pan (9 x 13-inch).
Top with bacon that has been partially cooked to remove some of the fat and water and the sliced olives.
Bake for one hour at 325Β°.
Can be prepared a day ahead, refrigerated and baked just prior to serving (may need to increase baking time).
Also delicious as leftover the following day.
Just reheat the refrigerated salad.
