Banana Muffins
Banana Muffins is an moderately easy dinner. Made with 2 overripe, medium bananas, 1/2 c. margarine, 1/3 c. brown sugar, 1 egg and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Sift flour, baking powder, baking soda and salt together. Cream the brown sugar and margarine together with the egg.
Mash the bananas with the water and add the vanilla.
Add the banana and egg mixtures to the dry ingredients.
Stir only enough to moisten.
Add nuts if you want.
Spoon batter into greased muffin cups or paper liners.
Bake at 350Β° for 25 minutes.
Makes 12 large or 24 small muffins.
