Black Bean Soup
Black Bean Soup is an impressive dinner. Made with 2 lb. black beans (turtle beans), 24 chicken bouillon cubes, 1 1/2 gal. hot water, 1 1/2 lb. smoked ham hocks and 4 c. chopped onions, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Clean beans, soak overnight in water to cover (drain).
Make chicken stock by dissolving bouillon cubes in 1 1/2 gallons hot water, in a 5 gallon pot.
Add drained beans and ham shank.
Bring to boil, reduce heat to medium and cook until beans are tender, about 1 1/2 hours.
