Black-Eyed Chili
Black-Eyed Chili is an moderately easy dinner. Made with 1 bag black-eyed peas, 1/2 lb. ground beef, 1/2 lb. hot sausage, cut in small chunks and remove casing, 2 c. stewed tomatoes and 1 chopped onion (large), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Prepare black-eyed peas according to package directions.
Brown onions, ground beef and sausage; drain.
Add onion, beef and sausage to peas.
Add entire can, including liquid, of tomatoes. Add salt and cayenne pepper to taste.
Cook over medium heat until slightly thickened.
Serve hot.
