Blueberry Cheesecake Bars
Blueberry Cheesecake Bars is an moderately easy dinner. Made with 1 box blueberry muffin mix, 1/2 stick oleo, 1/3 c. chopped pecans, 1/2 lb. cream cheese and 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 350°.
Grease a 9-inch square pan.
Rinse blueberries from mix with cold water and drain.
Cut butter into mix with pastry blender or 2 knives.
Stir in finely chopped pecans.
Press into bottom of pan.
Bake at 350° for 15 minutes or until set.
Blend cream cheese and sugar until smooth in a large bowl.
Add egg, lemon juice and lemon peel.
Beat well.
Spread over baked crust.
Sprinkle with blueberries.
