Cajun Jambalaya
Cajun Jambalaya is an impressive dinner. Made with 1 (3 lb.) fryer, 1 lb. smoked sausage or ham, diced, 2 c. shrimp, cleaned and deveined, 2 tbsp. shortening and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cut chicken into serving pieces.
Season with salt and pepper. Brown completely in melted shortening.
Remove from pot and make a roux with drippings and flour.
Add sausage or ham, which has been preboiled and drained.
Then add cooked chicken, onions, bell pepper, tomatoes, garlic and shrimp.
Cook, stirring constantly, for 10 minutes.
