Carrot Raisin Muffins
Carrot Raisin Muffins is an impressive dinner. Made with 1 1/2 c. all-purpose flour, 1/2 c. whole wheat flour, 1/2 c. sugar, 2 tsp. baking powder and 1/2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
In a large mixing bowl stir together both flours, sugar, baking powder, cinnamon and ginger.
Make a well in the center, set aside.
In a small bowl stir together eggs, undrained pineapple, carrot, raisins, corn syrup and vanilla.
Add to flour mixture.
Stir only until moistened.
Spray 12-cup muffin pan with nonstick spray coating.
Divide batter evenly among 12 cups. Sprinkle with nuts.
Bake at 400Β° about 20 minutes.
