Chicken and Salsa Soup
Chicken And Salsa Soup is an moderately easy dinner. Made with 1/2 lb. chicken breasts (bite-size pieces), 1 3/4 c. water, 1 (14 1/2 oz.) can chicken broth (or broth from boiled chicken), 1 or 2 tsp. chili powder and 1 (11 oz.) can whole kernel corn, drained, this recipe delivers authentic, satisfying flavors. In saucepan, combine chicken broth, water, chicken and chili powder.
Bring to boiling.
Reduce heat.
Cover and simmer for 8 minutes.
Add corn.
Simmer, uncovered, for 5 minutes more.
Stir in salsa, red peppers, garlic, onion and spices; heat through.
To serve, ladle soup into bowls.
Top with cheese.
