Chicken Enchiladas
Chicken Enchiladas is an moderately easy dinner. Made with 1 whole chicken, 1 can cream of mushroom soup, 1 can cream of chicken soup, 1 - 16 oz container of sour cream and 3 c shredded cheddar cheese, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook chicken and shred, place in bowl.
Add soups and sour cream.
Mix well.
Fill tortillas with chicken mixture, sprinkle on cheese, roll up and lay in pan (lined with chicken mixture). Top with cheese.
Bake, covered, for 40 minutes at 350 degrees. Uncover and bake 5-8 more minutes.
Can also substitute beef for chicken.
