Chicken Fajita Baked Potato
Chicken Fajita Baked Potato is an moderately easy dinner. Made with 4 large baking potatoes, 1 medium red or green sweet pepper, cut in strips, 1 small onion, chopped, 2 tbsp. margarine and 1 tbsp. taco seasoning mix, this recipe delivers authentic, satisfying flavors. Bake potatoes.
Cook sweet pepper and onion in hot margarine over medium heat until tender.
Add taco seasoning mix.
Cook and stir for 1 minute.
Remove from heat.
Stir in chicken, cheeses, olives and chili peppers.
Cut a lengthwise slit in the top of each potato.
Press open.
Divide chicken mixture among potatoes.
Spoon salsa over each.
Cover; cook on High (microwave) until heated through.
Serve with sour cream, guacamole and salsa.
