Chicken Jambalaya
Chicken Jambalaya is an moderately easy dinner. Made with 3 large hens, cubed, salt and pepper to taste, cooking oil, 3 lb. onions, chopped and 1 head garlic, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Season chicken with salt and pepper.
Brown in oil.
Remove chicken and saute onions and garlic until soft.
Add chicken and 20 cups of water.
Bring to a boil and add salt, pepper and Tabasco.
Add rice.
Bring to a boil and reduce heat to a simmer. Stir twice while cooking.
Cook until water is absorbed and chicken is tender.
Yields 24 servings.
