Drain and chop tomatoes.
Reserve juices from tomatoes separately.
Add oil, onion, garlic, sun-dried tomatoes, pine nuts and chicken to a non-stick sautΓ© pan.
Cook 4 minutes over medium-high heat, until garlic starts to brown.
Add the brandy and stir well, cook for 2 minutes.
Add the chopped can tomatoes and basil.
Cook 2 more minutes while stirring well.
Add chicken stock, reserved juice form tomatoes and cream.
Bring to a boil and simmer 20 minutes.
While the sauce is simmering, prepare pasta.
Drain pasta and return to pot.
Pour sauce over pasta and stir until well combined over low heat.
Add cheese and serve. Serve 4-6 people, depending on portion size!
