Chicken Quesadillas

Made with 1 1/2 lb. chicken cutlets, cut into 1/4-inch cubes, 2 to 3 tbsp. taco seasoning, 3 tbsp. oil, soft taco shells and monterey jack cheese, shredded, this recipe delivers authentic, satisfying flavors. Saute chicken in oil and seasoning 10 minutes or until done. Layer chicken on shell.
Cover with cheeses, tomato, olives, lettuce, hot peppers and salsa.
Cover with another taco shell. Sprinkle shell with more cheese.
Heat in microwave 1 minute.
Cut into wedges.
Serve on platter with salsa and sour cream to garnish.
