Chicken Vegetable Soup
Chicken Vegetable Soup is an moderately easy dinner. Made with 4 1/2 c. chicken broth, 1/2 c. chopped onion, 1/2 tsp. dried crushed basil, 1/2 tsp. dried oregano and 1 bay leaf, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a large saucepan, mix chicken broth, onion, basil, oregano, bay leaf and 1/4 teaspoon pepper.
Stir in vegetables.
Bring to boiling; reduce heat.
Cover and simmer for 6 to 8 minutes, or until vegetables are crisp.
Throw away bay leaf.
Stir in chicken and undrained tomatoes.
Makes 4 to 6 main dish servings.
