Christmas Chocolate Balls
Christmas Chocolate Balls is an moderately easy dinner. Made with 1 c. crunchy peanut butter, 1 egg, 1 tbsp. melted butter, 8 oz. pitted dates, cut fine and 1 c. confectioners sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine peanut butter, egg, butter, dates, coconut and confectioners sugar in large bowl and mix thoroughly.
If sticky, add more confectioners sugar.
Shape in 1-inch balls and refrigerate while preparing chocolate for coating.
Melt chocolate chips, semi-sweet chocolate and wax in top of a double boiler.
Use spoon or fork and dip balls in melted chocolate.
Place on foil to set.
Store in a cool place in a covered container.
