Chunky Orange-Lemon Salsa
Chunky Orange-Lemon Salsa is an moderately easy dinner. Made with 1/4 c. red wine vinegar, 1/2 c. sliced scallions, 1 tbsp. honey, 1 (16 oz.) can whole tomatoes, drained and coarsely sliced and 2 seedless oranges or tangerines, diced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In a small nonstick saucepan, heat the vinegar over medium heat.
Add the scallions; cook for 1 minute.
Mix in the honey; cook for 1 minute.
Remove from heat.
Stir in the tomatoes, oranges (or tangerines), lemon juice and pimientos.
Heat briefly. Refrigerate for up to 1 week.
Yields 2 cups.
