Coconut Custard Pie
Coconut Custard Pie is an moderately easy dinner. Made with 1 stick margarine, 2 c. white sugar, 4 eggs, beaten well until foamy, 1 c. milk and 2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Mix milk and vinegar together.
Set aside.
Melt margarine. Add sugar and cream well.
Add vanilla.
Then add eggs.
(Be sure to beat eggs well as this makes the pies better than your usual pies.)
Add milk.
Stir in coconut and mix well. Pour into 2 unbaked pie shells and bake on lowest rack for 40 minutes at 350Β°. This will serve 8 (each pie).
