Cream of Broccoli Soup
Cream Of Broccoli Soup is an moderately easy dinner. Made with 3 medium cut up potatoes, 1 c. chopped onion, 1 c. chopped celery, 1 (7 oz.) pkg. frozen broccoli and 1 c. evaporated milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook chopped potatoes, onion, celery and broccoli until soft and tender.
(Barely cover with water while cooking.) Place in blender and blend.
Pour in heavy saucepan.
Add milk and make a paste of 1 tablespoon flour and 2 tablespoons milk to thicken. Heat slowly but do not boil.
Yields 4 servings.
