Creamy Enchiladas(Serves 8) is an moderately easy dinner. Made with 1 can cream of mushroom soup, 1 can cream of chicken soup, 1 (4 oz.) can diced green chilies, 2 c. grated cheese (1/2 jack, 1/2 cheddar) and 1 pt. dairy sour cream, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix together soup, chilies, 1 cup cheese and sour cream in a saucepan and heat until cheese is melted. Using 1/2 of the soup mixture, spoon soup and ground beef into snack size tortillas. Roll up tortillas and place side by side in long pan with 2-inch sides.
Pour remaining soup mixture over top and sprinkle with rest of cheese. Top with olives.
Bake at 300Β° for 25 minutes.
