Curry Rice Salad
Curry Rice Salad is an moderately easy dinner. Made with 1 (6 oz.) jar marinated artichoke hearts, 1/3 c. hellmann's mayonnaise, 1 tbsp. lemon juice, 1 tsp. curry powder and 1 box rice-a-roni (chicken flavor), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Drain artichokes and save juices.
Cut artichokes in half; combine with mayonnaise, lemon juice and curry powder.
Fix Rice-A-Roni as directed on box.
Cool rice.
Mix rice and artichoke liquid, then add remaining ingredients.
Toss; chill and serve on lettuce leaves.
