Easy Crock-Pot Mexican Chili
Easy Crock-Pot Mexican Chili is an moderately easy slow-cooker meal. Made with 1/4 onion, chopped (optional), 1 lb. ground beef, 1 pkg. taco seasoning, 2 cans tomato sauce and 1 can mild ro-tel, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Brown meat with chopped onions and drain.
Put meat and onions in a crock-pot.
Open the can of whole tomatoes.
Grab one with your hand and stick your hand deep into an empty bowl.
Smash the tomato with your fingers (fun, but they squirt!).
Smash all the tomatoes and add to crock-pot.
Do not add juice.
Add all other ingredients to crockpot.
Cook on low for 3 to 4 hours or longer. Start it in the morning and eat it when you get home for dinner. Serve with Frito Scoops or saltines.
