Fiesta Crepes En Casserole is an impressive dinner. Made with 1 lb. ground beef, 1/2 c. finely chopped onion, 1/2 c. finely chopped celery, 1 (17 oz.) can cream-style corn and 2 (8 oz.) cans tomato sauce, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Brown beef, onion and celery in frying pan. Drain. Stir in corn. Combine tomato sauce and taco mix in separate bowl, stirring to blend. Add 1 1/3 cups of tomato sauce mixture to meat and corn, mixing well. Spoon 2 tablespoons meat mixture onto each cornmeal crepe and roll to enclose filling. Spread remaining meat mixture in a 13 x 9-inch baking dish.
Place crepes, seam side down, on top of
Meat mixture. Spoon remaining tomato sauce mixture over crepes.
Bake in a 375Β° oven for 20 minutes. Serves 10.
