Frank 'n Chili Manicotti Ole
Frank 'N Chili Manicotti Ole is an moderately easy dinner. Made with 10 manicotti shells, 1 (7 1/2 oz.) can tomatoes, 1 (7 1/2 oz.) can jalapeños, 2 (15 oz.) cans chili with beans and 10 frankfurters, this recipe delivers authentic, satisfying flavors. Cook manicotti in boiling salted water according to package until just tender.
Drain; set aside.
Shred 2/3 of cheese; set aside.
Cut remaining cheese into 4-inch strips.
Slit frankfurters lengthwise; insert strip of cheese.
Place 1 cheese stuffed frank into each cooked manicotti.
Combine chili, tomatoes and jalapeños; spoon about 2 cups of mixture into bottom of 13 x 9 x 2-inch baking dish.
Arrange the 10 filled manicotti shells atop sauce in dish. Pour remaining chili mixture over.
Cover; bake in 350° for 25 minutes.
Uncover.
Sprinkle shredded cheese on top.
Bake 10 minutes more.
