Fruity Eggnog Muffins(Microwave)
Fruity Eggnog Muffins(Microwave) is an moderately easy dinner. Made with 1 1/2 c. flour, 6 tbsp. dry eggnog mix, 2 tbsp. sugar, 1 tsp. baking soda and 3/4 c. candied cherries, quartered, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine flour, eggnog mix, sugar and baking soda.
Stir in cherries coated with dry mixture.
Blend in milk, oil and egg. Line each compartment of a foam insulated large or jumbo egg carton with paper mini baking cups.
Spoon batter into each cup filling 2/3 full.
Place a cherry quarter in center of each muffin.
Close lid of carton and microwave on 50% for 3 minutes, rotating carton midway through cooking.
Do not peek.
Leave lid closed and set carton flat for 3 minutes.
Remove muffins.
Repeat procedure twice for 36 mini muffins.
