Made with 4 small sweet potatoes, cooked, cooled and sliced 1/4-inch thick, 1 c. apple juice, 2 tbsp. finely chopped ginger root and 1 tbsp. honey or dark sugar (or to taste), this recipe delivers authentic, satisfying flavors. Arrange the potato slices in an overlapping pattern in a 1 1/2-quart casserole.
In a small bowl, combine the apple juice, ginger root and honey or brown sugar; and pour the mixture over the potatoes.
Bake at 425Β° until potatoes have a golden tinge and the liquid has been absorbed, 20 to 25 minutes.
