Grandma Coy's Curry Pickles
Grandma Coy'S Curry Pickles is an moderately easy dinner. Made with 6 large or 24 small cucumbers, sliced (leave rind on), 1 1/2 c. salt, 8 c. water, 1 tsp. curry powder and 2 c. vinegar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Wash cucumbers and drain.
Combine salt and water.
Pour over cucumbers.
Let stand 5 hours. Drain and rinse thoroughly.
Mix remaining ingredients.
Heat to boiling.
Pour over cucumbers. Heat to boiling and pack into sterile jars. Seal immediately!
(Do not have to use canner!)
