Green Enchilada Sauce
Green Enchilada Sauce is an moderately easy Mexican dinner you can prepare in about 1 hour 22 minutes. Wash tomatoes; quarter and remove all seeds.
Peel garlic.
Put all ingredients in large pot with a quart of water.
Watch pot so tomatoes won't stick.
Add water as needed.
When all tomatoes are tender, take off stove and cool.
Run everything through blender. Return to stove; bring to a boil.
Put in quart jars and process 45 minutes.
Makes 7 to 9 quarts.
