Blend fish, egg white, grated yam, starch, and salt into a smooth airy paste.
Spread into a shallow pan or shape into triangles and steam gently until set.
Cut the hanpen into neat triangles if steamed as a slab.

Serve in clear broth with scallions, yuzu peel, and mustard if desired.
