Health Muffins
Health Muffins is an impressive dinner. Made with 2 c. boiling water, 5 tsp. baking soda, 1 c. oil, a little cinnamon, nutmeg, vanilla and ginger (optional) and 2 c. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Add boiling water to soda, then add oil and any spices.
Cool to lukewarm.
Now add sugar and eggs; mix well. Set aside. Combine flour, cereals, wheat germ, raisins and nuts in a huge bowl.
Pour in lukewarm mixture, then add buttermilk.
Stir only enough to moisten. Batter will keep in sealed container for up to 6 weeks in refrigerator or bake muffins and freeze.
Bake at 375Β° for 20 minutes. Fill muffin tins to 2/3 full only.
