Jambalaya
Jambalaya is an moderately easy dinner. Made with 1/4 c. oil, 1 chicken, cut up or boned, 1 1/2 lb. sausage (not italian), 4 c. onions and 2 c. each: celery and green pepper, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Saute sausage in oil (lard or bacon drippings).
Remove from pot.
Season and brown chicken.
Remove from pot.
For brown jambalaya, add heaping tablespoon of brown sugar to oil and caramelize.
For red jambalaya, delete this step.
