Lemon Soup
Lemon Soup is an moderately easy soup you can prepare in about 1 hour 20 minutes. Made with chicken (any part), carrot, chopped, celery, onions, cut into 1/4's and c. rice, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Combine chicken, vegetables and water to cover in a saucepan. Cook chicken until tender.
Remove and chop chicken into pieces; set aside.
Combine rice with broth in a saucepan.
Cook just until rice is tender.
Season to your taste.
Beat egg yolks and lemon juice; whisk a small amount of hot liquid (soup) into egg mixture. Then whisk egg mix back into soup.
Add chicken.
Heat just to serve.
