Low-Fat Chicken Soup
Low-Fat Chicken Soup is an easy dinner. Made with 2 tbsp. oil or margarine, 2 tbsp. fresh parsley, chopped, 1/4 c. fresh celery, chopped, 3 tbsp. onion, chopped and 1 1/2 c. cooked chicken (white meat only; turkey may be substituted), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Melt oil or margarine and saute seasoning for about 5 minutes. Add chicken and cook about 5 minutes more.
Add salt and pepper to taste and 2 quarts of water to chicken mixture.
Sweet basil and a few whole allspice may be added for flavor.
Great with rice or noodles.
