Lu's Roast Beef
Lu'S Roast Beef is an moderately easy dinner. Made with 1 (4 to 6 lb.) beef rump roast, 6 potatoes, peeled, 6 carrots, peeled and cut in half, 1 can cream of mushroom soup and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Place roast in roasting pan. Bake at 375° for 1 hour.
Place potatoes and carrots around roast. Combine remaining ingredients and 1 soup can of water in blender container.
Process until smooth.
Pour over roast and vegetables.
Bake, covered, at 275° for 3 hours longer or until roast is tender.
You may slice an onion, if you prefer, over the roast.
Yields 6 servings.
