Miniature Cheesecakes is an easy dinner. Made with 2 (8 oz.) bricks cream cheese, 1/2 c. sugar, vanilla wafers, 2 eggs and 2 tbsp. vanilla extract, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Beat all of the ingredients, except wafers, together for 5 minutes.
Place vanilla wafers in bottom of muffin baking cups. Pour filling into cups about 3/4 full.
Bake at 350Β° for 20 minutes.
Refrigerate before serving and top with favorite pie filling.
