Morning Glorious Muffins
Morning Glorious Muffins is an impressive dinner. Made with 1 1/4 c. flour, 3/4 c. wheat flour, 2/3 c. sugar, 2 tsp. baking soda and 2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In a large mixing bowl, combine flour, sugar, soda, cinnamon and salt.
In another bowl, combine carrots, apple, dates and pecans.
Stir in eggs, oil and vanilla.
Add to dry ingredients. Stir until moistened.
Stir in coconut.
Grease or line muffin pans with paper baking cups.
Spoon batter into muffin pans.
Bake at 375Β° for 18 to 20 minutes.
Makes approximately 18 muffins.
